This is a quick an easy recipe for Bombay Potatoes - an excellent accompaniment to your Indian curry.
Ingredients
- 2 medium sized potatos (not quite baking size but almost)
- 1 medium onion, thinly sliced
- 1/2 a tin of chopped tomatoes
- 1 tsp of tumeric
- 1 tsp of garam masala
- Salt and pepper to taste
- 1 tbsp of vegetable oil
- Chopped fresh coriander for garnish
Instructions
1. Chop the potatoes into small chunks and par boil for approx 15-18 minutes.
3. Meanwhile in a frying pan, fry the onions until they've turned brown .
4. When the potatoes are almost boiled, add the potatoes to the onions in the frying pan and fry for a couple of minutes, then add the tomatoes, tumeric and garam masala.
5. Fry for a further few minutes until the potatoes have fused with the tomotoes and the excess water has been boiled off.
Serve as a side dish to your favourite curry
