The most important thing about this recipe for sausage casserole is that you choose good 'butcher' quality sausages, like cumberland for example.

Ingredients
- 8 Good Quality Sausages
- 2 onions, roughly segmented
- 2 cloves of garlic, crushed/chopped
- 200g of mushrooms
- 1 tin of tomatoes
- 1 tin of butter beans
- 1 courgette, diced
- 1-2 glasses of winen
- 1 large pepper or 2 small ones
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried basil
- 1 teaspoon of ketchup
- Salt & pepper to taste
Instructions
1. Begin by frying the sausages in a little olive oil over a low-medium heat
2. After a few minutes, While the sausages are frying, fry up the onions and garlic in a separate saucepan or oven proof dish
3. Add the pepper and fry for a further few minutes
4. After approximately 10 minutes, add the tin of tomatoes and add the sausages, wine, butter beans, ketchup, herbs and salt / pepper
5. Place in a preheated oven at 200C and cook in the oven for at least 1 hour
6. After 20 minutes add the courgette.
7. After another 15 minutes add the mushrooms.
You can leave it in the oven (turn down heat) until you are ready to serve. It goes really well with with mash and some green vegetables like peas and broccoli
